Since the late Qing dynasty and the period of the Republic of China, Zhongshan has come forth with many successful businessmen. A lot of “time-honoured brands” have been developed in Zhongshan and preserved the cultures from the old times. Bakery brand Choi Heong Yuen is one of them. Unlike the usual almond cookies, those from Choi Heong Yuen with meat filling are truly extraordinary and unique. The origin of the recipe is related to a traditional family of scholars in the Xiangshan County during the final years of Guangxu reign of the Qing dynasty. 

As the family’s fortunes declined, they were anxious about the expenses for family gatherings as the elder member’s birthday was approaching. An idea popped into the head of a maid. After grinding dried green beans into powder, she added some sugar-marinated pork belly into the centre and baked into cookies for serving guests. All the relatives and guests praised the cookies a lot after tasting. After the Xinhai Revolution, the family produced almond cookies in mass for sale and later became the Chinese old brand of today.
