Soup with pepper and chili is known and liked by everyone from Henan. In the morning, there are a lot of stalls selling soup with pepper and chili. Having it with fired bread, Baozi, and Youtiao is a good way to start the day.
Through hundreds of years, people from Henan have extended the method of making soup with pepper and chili. They mix the soup with pepper and chili with tofu jelly and call it soup with pepper and chili mixed with tofu jelly.
Soup with pepper and chili features a spicy and fresh, appetizing flavor, which goes well with Youtiao and Baozi, and is perfect with fried green onion flavored bread. A 1:1 mixture with tofu jelly is less spicy, but is popular as well.
